Red Bananas and my taste buds are having a love affair…

So, it’s what is loosely referred to as “summer” here and that means that I get to go to farm markets.  It is one of my most favorite things to do because you can find all kinds of things.  Recently I went to the local farm and found red bananas.  Now before ya’ll start emailing me to say that these aren’t local, I know.  But I don’t really buy fruit unless it’s summer so it’s a treat to me. Anyway, these red bananas.  Have you seen these guys hanging out at the grocery store?  They are pretty high up on the cute scale aren’t they?  Turns out they are pretty good for you too.  One red banana contains Vitamin A, Vitamin C, Calcium, Iron, Vitamin E, Thamin (B1), Riboflavin (B2), Niacin (B3), Vitamin B6, Folic Acid (Folate), Magnesium, Zinc and Copper.  Not only that, they are high in Potassium.  Whew!  […]

Anyway, these red bananas.  Have you seen these guys hanging out at the grocery store?  They are pretty high up on the cute scale aren’t they?  Turns out they are pretty good for you too.  One red banana contains Vitamin A, Vitamin C, Calcium, Iron, Vitamin E, Thamin (B1), Riboflavin (B2), Niacin (B3), Vitamin B6, Folic Acid (Folate), Magnesium, Zinc and Copper.  Not only that, they are high in Potassium.  Whew!  And at 67 calories, 17 grams of carbohydrates and even a bit of protein, these little guys are a perfect midday snack!

Red BananasI took my little reds and sliced them in long halves.  Then I cooked them in a slightly oiled skillet (so as not to stick) and spiced them up with a little bit of cinnamon, allspice and nutmeg.  Once slightly browned I pulled them out and topped them with sliced strawberries and a drizzle of agave syrup.

These were freakin’ good!  I liked them and even tested them out on another hungry vegan, which gave them rave reviews as well.  I can totally see these making an awesome banana split or even used inside my plantain pancakes (Oh, I didn’t tell you I make plantain pancakes?  I so do and they are good!)  Either way, the next time you see these cute little buggers, pick them up!  If you like yellow bananas (which just so happens to be the worlds largest herb) then you are sure to love these.
