Vegan Chocolate Chip Cookie Monday

It's Monday. Why not make some vegan chocolate chip cookies? Why not, indeed?

I am, right this very second, snacking on these delicious vegan chocolate chip cookies.  They are, I have to say, pretty good.  They could be better, I’d add some more of some things and less of others.  But I made the dough in 15 minutes- flat.  I was burning my tongue on hot chocolate chip cookies ten minutes after that.  So, for those reasons, this cookie is a hit.  If I had a function to go to and needed to take some cookies, these would be perfect.  They made quite a bit (good for my belly, not so good for the size of my ass).  Go ahead and make ’em.  It’s Monday, isn’t that reason enough?

Vegan Chocolate Chip Cookies

Vegan Chocolate Chip Cookies

3/4 cup sugar (I used Florida Crystals)
1/2 cup margarine (I used Earth Balance)
1/2 cup canola oil
3 Tablespoon water
2 teaspoon vanilla extract
2 1/4 cups whole wheat pastry flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup vegan chocolate chips (I used Enjoy Life)
1/4 cup currants

* Although I didn’t add walnuts to mine, I did to one cookie just to taste.  I would totally add walnuts in as well as reduce the amount of sugar to 1/2 cup – these were fairly sweet. *

Preheat oven to 375 degrees.

Stir together the sugar, margarine, oil, water and vanilla. Then mix together the flour, baking soda, and salt and add to the sugar mixture. Add chocolate chips and currants- mix together well. Scoop spoon-sized portions onto a cookie sheet (no need to grease) and bake for 10 minutes. Cool on cooling rack.  Makes 24 cookies.

    I don’t see why not – I just had the whole wheat pastry flour. If I made them again, I would totally add nuts (and if I could sneak it past the “other” hungry vegan here – more currants – I LOVE currants. Especially with chocolate!)

  2. That looks super-easy! I’ve been wanting to make cookies–thanks for reminding me. :) Could you use all-purpose flour instead of the pastry flour?
