French Pancakes

The pancakes were spongy and tasted like french toast to me. I loved the texture and flavor that the banana's lended to the pancake.

Tonight’s dinner was pancakes. Now, I have to be honest and say I don’t even like pancakes. I do, however, like breakfast dinners. I love breakfast foods. Just do. So, I was going to make vegan sausage and pancakes. Here’s my recipe:
Vegan French Pancakes
~ Serves 2 hungry vegans
- 1 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon of vanilla
- 1 cup soymilk
- 1 tablespoon canola oil
- 1 mashed ripe banana
Mix all the dry ingredients together. Once incorporated, mix in all dry ingredients except the banana. When you are done mash in the banana. Fry them up in a skillet with a little bit of oil and violá! Top with crushed walnuts and maple syrup.
I served my pancakes up with 2 patties of Lightlife’s vegan sausage. The pancakes were spongy and tasted like french toast to me. I loved the texture and flavor that the banana’s lended to the pancake. It paired well with the crushed walnuts and sweet syrup. If you don’t like maple sryup, these cakes would be good with agave on them as well.
