Kale Kicks Ass, a Recipe

What's in this post
There are several vegetables that I have an obscene amount of fondness for, but kale is at the top of the list. My fridge always has a bunch or two in it and for good reason, kale tastes great!
Are you a dieter? Kale is your friend. Kale is high in fiber. We’ve talked about fiber before haven’t we? Fiber is your friend. It keeps you filled up and keeps you full for a long time. Know what that means? You’re less likely to sneak in the kitchen for a snack at 9pm. Know what that means? Your pants will fit better. Need I say more?
Alright, maybe you aren’t a dieter. Kale is a nutritional powerhouse. It’s one of the your best sources of beta-carotene and contains other powerhouses nutrients such as lutein, zeaxathin (carotenoids that help keep UV rays from damaging eyes & causing cataracts) calcium, vitamin C, folic acid, vitamin B6, manganese, and potassium. Whew. Good stuff. But really I just like it because it tastes good.
So let’s see how we turned this:
into an insanely delicious insanely nutritious, not to mention pretty meal.
Creamy Tahini Kale Salad
- 1 large bunch of curly kale – washed, dried, and chopped into bite size pieces
- One 15 oz can of dark red kidney beans, drained and rinsed thoroughly
- 1/3 cup raw pine nuts
- 1/2 cup Sesame Tahini
- 2 small cloves (or 1 large) garlic – minced finely
- 1 – 1 1/2 Tbsp apple cider vinegar
- 1 lemon – juiced
- 1/8 cup water
- Salt and Fresh Cracked Pepper to taste
First things first, you must wash and trim your kale. I know this part sucks, sorry but suck it up. After you wash the kale, dry it. Don’t skip this step. You don’t have to have a salad spinner, I don’t. I pat my kale leaves (gingerly, with adoration and love) with a paper towel and it works just fine. Now it’s time to chop the kale, but first you’re gonna have to remove the stem. Simply take a sharp knife and run it down along the stem on each side to remove the leave. Then chop up into bite size pieces. Now, I realize that this seems like a lot of instruction on how to wash kale but bear with me here, I’m only trying to save your sexiness here- because, let’s face it, no one looks sexy stuffing their faces with huge kale leaves as tahini drips on their chins. If the kale is wet, your dressing won’t “stick” and it’ll just taste….watery. So wash, dry, and cut the kale, okay? Once washed, dried, and cut- put into a large bowl. Add rinsed kidney beans and pine nuts to kale and mix thoroughly.
In a separate bowl add finely minced garlic, sesame tahini, apple cider vinegar, lemon juice, salt, and pepper. Whisk together, adding the water a little at a time, until fully combined. Dump all over kale, beans, and pine nuts and mix carefully and thoroughly. Let the salad sit for 15 minutes to allow the acids in the dressing break down the raw kale a bit. Simply give a good stir before serving.
Now, before you run off and enjoy this (and you should), I need to give you some kind disclaimer. Raw garlic, sesame tahini, and lemon juice are all delicious to eat. They also linger awhile in your mouth. So if you’re planning on some sexy time after eating this just make sure your date likes little garlic kisses ;)
