I say Potato – you say Yum!

Potatoes have a long and rich history.  They were first discovered in the Andes Mountains of South America some 7,000 years ago.  The tubers impressed people with their high nutritional content and ruggedness.  The vegetable would take its time, but eventually it made it's way across Europe finally becoming a dietary staple. Did you know that potatoes are very low in saturated fat, cholesterol and sodium?  They are!  Plus, a potato is a good source of Vitamin B6, Potassium, copper and an excellent source of Vitamin C.  You want more?  Ok, potatoes are a good source of complete protein.  Meaning, the tuber has all the essential amino acids (in proper proportions) needed to make a complete protein, making the potato a high-quality protein. Tempeh makes my belly smile

I've been on a cooking kick lately, I think it's all the great food I find at the farmers market.  The farmers markets here are only open for a few months and I take advantage of them as much as possible! Last night I couldn't decide what I wanted to eat. So, I went out to my own herb garden and cut a slew of basil, oregano, chives, thyme and cilantro. Then I picked some cherry tomatoes (yum!) and inside I went to see what I could come up with. Here's my dinner: Pita pockets stuffed with tempeh salad, lettuce and tomatoes. Heaven! Let me tell you what I did.  First, I took an 8oz package of tempeh and cut it in two.  I put both pieces into the steamer.  While that was going, I took some onions and peppers and lightly cooked them in a bit of canola oil.  [...]

Coconut Breakfast Cakes

Yesterday I made some coconut breakfast cakes for breakfast and had the leftovers today as a snack. They are really tasty, quick and so good for you.

French Pancakes

The pancakes were spongy and tasted like french toast to me. I loved the texture and flavor that the banana's lended to the pancake.
