It's Monday again and what better way to start your week off than with super delicious blueberry muffins? These muffins are less sweet than regular style bakery muffins but the blueberries more than make up for the lack of sugar.

So, it's what is loosely referred to as "summer" here and that means that I get to go to farm markets.  It is one of my most favorite things to do because you can find all kinds of things.  Recently I went to the local farm and found red bananas.  Now before ya'll start emailing me to say that these aren't local, I know.  But I don't really buy fruit unless it's summer so it's a treat to me. Anyway, these red bananas.  Have you seen these guys hanging out at the grocery store?  They are pretty high up on the cute scale aren't they?  Turns out they are pretty good for you too.  One red banana contains Vitamin A, Vitamin C, Calcium, Iron, Vitamin E, Thamin (B1), Riboflavin (B2), Niacin (B3), Vitamin B6, Folic Acid (Folate), Magnesium, Zinc and Copper.  Not only that, they are high in Potassium.  Whew!  [...]

I say Potato – you say Yum!

Potatoes have a long and rich history.  They were first discovered in the Andes Mountains of South America some 7,000 years ago.  The tubers impressed people with their high nutritional content and ruggedness.  The vegetable would take its time, but eventually it made it's way across Europe finally becoming a dietary staple. Did you know that potatoes are very low in saturated fat, cholesterol and sodium?  They are!  Plus, a potato is a good source of Vitamin B6, Potassium, copper and an excellent source of Vitamin C.  You want more?  Ok, potatoes are a good source of complete protein.  Meaning, the tuber has all the essential amino acids (in proper proportions) needed to make a complete protein, making the potato a high-quality protein.
