A visit from Andria from Veg is Sexy

I am asked constantly about why I decided to name my site “Veg is Sexy.”  Well, frankly I do think that committing to a compassionate, vegan lifestyle is super sexy!  But when I say “sexy” I don’t just mean sexual, I mean fun, fresh, exciting, attractive, amazing!  I aim to inspire people to feel confident about their dietary and lifestyle choices and make them feel good about the paths they have chosen.  And speaking of feeling good, that is one of the things I love most about vegan food – the way it makes you feel amazing from the inside out.  I am honored to be sharing my sweet potato chili with YDV for it’s new relaunch – what better way to celebrate than stuffing your face with something awesome?  Congratulations to Your Daily Vegan from one sexy veg to another!  Bon appetit!

Andria’s World-Rocking Sweet Potato Chili

WARNING: Sweet Potato Chili is best made barefoot as it will probably knock your socks off anyway.

1 T olive oil
1.5 sweet onions
4 cloves garlic
2 bell peppers (green, red, yellow, or orange combination)
3 sweet potatoes
1 29 oz can tomato sauce
1 29 0z can pinto beans (make sure they are vegetarian, no lard in ingredients)
1 15 oz can black beans
1 packet McCormick’s original chili seasoning

- Finely chop onions and garlic. Saute in olive oil on very low heat in a large pot until onions start getting soft.
- Add in your chopped peppers and continue stirring until onions become translucent.
- While onions and peppers are cooking, take a fork and ventilate your sweet potatoes by poking holes all around the body of each potato. Stick them in the microwave for about 6 minutes to soften the potatoes and get a head-start on cooking. Chop each potato into small pieces, skin on. They will be hot, so I usually use a clean dish towel to hold them steady. Add the pieces to your pot.
- Add your can of tomato sauce.
- Drain but do not rinse your pinto and black beans. Add to pot.
- Stir in your packet of seasoning.
- Continue simmering on low heat, stirring every so often. Cook for about 45 minutes or until sweet potato pieces are tender.

This will make about 8 servings, I like to make a big pot so there are leftovers. Feel free to half the recipe, but I promise you’ll want more ;)
