
Farro served with Italian Kale Salad
Sometimes I make a meal that I could eat every day, all day. This is one of them. If you’ve never had the delicious pleasure of eating farro, you simply must. Farro is hearty whole grain goodness, similar in taste and chewiness to wheatberries- only yummier. It’s a little hard to find here in NE Ohio, but my pals over at Mustard Seed Market have recently started carrying it. It’s a bit dear on the price, but totally worth it as I don’t eat it often. Here, a close-up:

Smoked Tofu Farro
Pretty, right? For this dish I used toasted farro, smoked tofu (I used SoyBoy, I love that stuff but you could make your own), cherry tomatoes, green beans, green onions, arugula- all fresh from the local farmers market. It’s dressed with olive oil, white wine vinegar, and herbs fresh from my garden. Delish!

Italian Kale Salad
I served my smoked tofu farro alongside a simple kale salad. I took fresh curly kale and sauteed them in an iron skillet with; garlic, red pepper flakes, onions, sun-dried tomatoes, and toasted pine nuts until slightly wilted. I drizzled a bit of balsamic vinegar over the whole pan right before I moved it off the heat. It made a great pair with the farro! Pretty and delicious.
