Raw Vegan Crepes

You can feel good about eating these crepes. They're raw, vegan, and packed full of (nutrition) taste.

Raw Crepes

I’ve been enjoying more raw foods now that I’ve purchased an Excalibur Dehydrator and it’s been so deliciously fun.  With the demise of my beloved Borders Books, I’ve also been able to pick up new raw cookbooks at a fraction of the original price.  One of my favorite raw chefs is Ani Phyo, she’s so amazing.  I purchased both Ani’s Raw Food Essentials and Ani’s Raw Food Desserts. What great buys!  I’ve already made tons of awesome things out of each.

Recipe gratitude goes to Ani for her Apple Crepe recipe, which I’ve modified only slightly below to add more spice.  These have a 100% yum approval rating from my taste tester- which is a feat as this hungry vegan tends not to care for raw foods.  Make these, in fact- make a double batch of these, they’re that good!

Raw Vegan Crepes

  • 2 cups cored and diced apples (No need to peel, I used 1 large pink lady apple)
  • 1 cup flax meal
  • 1 Tablespoon Agave
  • 1 teaspoon cinnamon
  • Fresh Nutmeg (several scrapes across a grater- not more than 3)
  • Water, as needed (I didn’t need any- you might need a dash)

Using a food processor or high speed blender process the apples until smooth.  Add flax meal, agave, and spices.  Blend until smooth.

Spread mixture onto a lined (parchment paper, paraflexx or similar) dehydrator tray.  I used a measuring cup to ensure equal size crepes, using an 1/4 cup.  Spread mixture as thin as you can, careful to make sure it’s even.  I was able to make 8 crepes with this recipe, depending on the size of crepes you make you may get more than 8.

Dehydrate the crepes for 4 to 6 hours at 104 degrees or until completely dry.  I pulled mine closer to 4 hours than 6 because I wanted my crepes to be bendable.  To speed the drying process you can (in the middle of the dehydrating) peel the crepes off of the liner (carefully or they’ll rip) and flip them over to finish drying.

I topped mine with nut butter and strawberries but you could use nut cheeze or anything else you can think of.  The apple is a mild sweet taste and would pair well with either savory or sweet.  And remember, just because the crepes are raw, it doesn’t mean that the filling has to be.  Fill it with something cooked if that’s more your thing.  Make it your own!

    Can I use white chia seeds instead of flax seeds? I can grind either in my thermomix. Thank you.

      Hi Annie, I don’t think you could. I think chia would not mold together like the flax does. If you try it and it works, let me know! :)
