Cheap Vegan Muesli

I love muesli, all cereals really. One cereal I never buy is muesli- I can’t bring myself to pay the $4 – $5 bucks a box for something I can make so cheaply and make with whatever my favorite bits and pieces are. It’s so ridiculously simple, honestly, that I just don’t understand why folks don’t do it more often.
I like to make my muesli out of thick cut oatmeal. Don’t get the quick cooking kind, you want plain ole rolled oats. You can save money by buying your oats in bulk, I can usually find organic rolled oats for less than a dollar a pound. What comes next is really up to you. I always have a variety of nuts and dried fruits on hand so I just pick a bunch out and throw it all together. Sometimes I get all fancy-pants and add some ground cinnamon to my muesli- sometimes not. Seriously, it doesn’t get easier than that.
This particular batch has sliced almonds (I paid $3 for a 1/2lb bag), currants (I paid $3.50 for a .75lb container), shredded coconut (I paid $4 for a huge ass bag of it), and soymilk ($2.50 for a 1/2 gallon of soymilk). I could make tons of muesli with all of that. Plus- you know what? You can totally get the ingredients for homemade (read: cheap) muesli not only at grocery stores, but now they are starting to be sold at box stores- like Target.
(I’m convinced that Target is out for world domination. That place is selling everything these days. I spent some serious time going through the “new’ food section to see what was vegan. They had quite the large variety that was pretty inexpensive. More on that later.)
Muesli is perfect to put into portion size bags and take with you to work, school, or traveling. Totally convenient, totally affordable, totally healthy, and totally vegan. Score!
