It seems unacceptable and ridiculous that restaurants cannot manage to create even a few items that aren't primarily meat or drowning in cheese/cream/butter.

Veganism is taking a stand for the most vulnerable of us – animals who have no tools or weapons that can effectively stand against the riot of human consumption.
Treating animals well in life doesn't make it acceptable to eat them at some later point.
Fidel Antonio gets the essence of it, a truth that transcends status, nationality, race or species – animals have the right to life, just like us. And we do not need to eat them to live and thrive.
Standing up for what I believe outside of my personal life, even in relatively benign circumstances, was easier to do than I once would have thought.
