So, I finally broke down and bought ‘Vegan Cupcakes Take Over the World’ by Isa Chandra Moskowitz and Terry Hope Romero.  If you haven’t purchased this book then you should.  This book, this gem of a book, is now responsible for the added 10 pounds of cupcake-y goodness that now resides on my rear end.  And I’m not complaining a bit.  These things are good. I decided that I would test these cupcakes out at a barbecue hosted at my house.  So I set to baking.  First, I should mention that I don’t have a baking bone in my body.  I can cook and I like to think that I can cook well.  But baking is a whole different ball game for me.  I can eat baked goods all day long but baking them poses more problems than I care to deal with.  I’ve always thought that some people are [...]

I’ve always thought that some people are bakers and some people are savory cookers.  I’m in the latter category.  Well, I was in that category.  Until now.

Apparently the thought of baking something that other people were going to eat made me a bit insane.  Did you know they have whole sections of stuff for cupcake making?  They so do.  They have liners in every color and pattern and cute toppers to match.  There’s special pans, stencils, pastry bags w/a million different tips and stands that make the plates you were going to use look…well, boring.  So I loaded up.  I got new pans, liners, toppers, pastry bags and several different tips.  I even broke down and bought brownie holders because they looked so cute.  Then I went out and bought the stuff to make brownies since I had no intention of making them until I saw this crap I didn’t need stuff.

So off I went like a good little baker to see what I could create.  What I ended up creating was five – FIVE – dozen cupcakes.

These are my first batch:

Lemon Cupcakes with Lemon Buttercream icing topped w/coconut

Lemon Cupcakes with Lemon Buttercream icing topped w/coconut

These are the lemon cupcakes.  I have never used a pastry bag w/tips before but it really did make for pretty cupcakes.  The cupcakes in the back with the flowers on them are vanilla cupcakes with raspberry butter cream frosting.  Apparently that is the only picture I have of the vanilla ones.  Both cupcakes were really simple to make.  The directions in the book are really easy to follow, which was important to me since I am not a baker.  The recipe says it’ll make a dozen or so cupcakes but each batch for me ended up being about 17 cupcakes.  And I filled each cupcake liner 3/4 of the way and they still make large cupcakes.  Awesome.

Then I tried chocolate cupcakes and came up with these:

Cookies and Cream Chocolate Cupcakes w/Cookie Cream Icing

Cookies and Cream Chocolate Cupcakes w/Cookie Cream Icing

These, my vegan pallies, these are heaven.  I started out with the basic chocolate cupcake and added some chocolate chips and broken up oreo-ish cookies to the batter.  Then I took vanilla butter cream icing and added more cookies and chips and mashed it all together.  These were so good.  Again, easy to make and had probably 15 cupcakes with each batch.  I also made chocolate chip cupcakes with vanilla butter cream frosting.  I apparently don’t have a picture of them, which is a shame since they looked so cute topped with chocolate chips.  I guess it just gives me a reason to make them again, huh?

So I had these out on the barbecue day.  The guests were a mix of vegans, vegetarians and omni’s.  The guests knew that the cupcakes (all the food actually) were vegan since it was my house but there were a few people there that were friends of friends so they were going to be exposed to vegan food for the first time.  I forced everyone to eat cupcakes until they could eat no more.  The verdict?  Everyone LOVED the cupcakes.  The cookies and cream went the fastest with lemon coming in a close second.  It was pretty much a tie at which, between the two, were the favorites.  The vanilla and chocolate chip cupcakes were devoured as well but put up with the fancy pants cupcakes they didn’t stand a chance on winning the crowd favorite award.  And, one of the best parts, is that people just couldn’t believe that the cupcakes were vegan.  They even asked me for the recipes.  Now THAT is awesome vegan activism right there! Whoo Hoo!

So go out and get the book.  It’s awesome and you’ll feel awesome when you create yummy cupcakes that people gobble up.  Vegan cupcakes could really take over the world.  And I for one, can not wait.  YUM!

Before I bought the book, I had attempted to make cookies once – awful. They stayed mushy and never cooked! My mother and I agreed I couldn’t bake. Then I bought this book, and so began my obsession with cupcakes. I’ve made several different varieties and every one is delish! So glad you bought it. Enjoy!
