From Street Market to Truck Corral: The Pod’s Vegan Journey

Food trucks are usually synonymous with good, fast eats. So what happens when you take a food truck and throw veganism into the mix? Deliciousness, of course!! Starting off by selling their famed beet burger and breakfast burritos at a local street market, The Pod, in Durango, CO has added wheels to the mix to deliver their fresh food.

Owner Kathy Juracka was getting such positive reviews at the La Plata County Fairgrounds Sunday flea market that she was recently invited to join other food vendors for Cha Cha’s Food Truck Corral. Since many of the other trucks at this food court are not vegan, it goes to show how good The Pod’s food actually is. “It’s nice that I’m not the lone vegan anymore,” Juracka said to The Durango Herald, as many Durango folks embrace an entirely vegan diet.
