It’s pretty awesome to see that some Universities are waking up to the fact that healthy vegan food is in. The University of Maryland Dining Services will introduce new vegan and vegetarian options this semester to promote healthy eating habits among students. The new menu will be available by the end of the month (today?). The hope is that, by expanding their vegan options, they will not only encourage vegans but all students to eat healthy. John Gray is the senior executive chef for Dining Services. He said he found the Sprouts section of the Diner lacking in variety. “Before my time, our main food supplier dropped a lot of vegan products,” Gray said. “Over the summer, we’ve found a company that stocks all these products.” And that’s good news since it means that there will be more vegan options by the end of the year. And Gray isn’t the only person searching for vegan food either. “Most of the time, my options are very limited,” said Patricia Sazama, a freshman. Sazama has been vegetarian for years as is happy to see that the University is doing more.
Colleen Wright-Riva, the director of Dining Services, believes that everyone deserves to find a healthy vegan meal. “In general, our job is to provide a lot of choice for students,” Wright-Riva said. “If you were to line up 10 students, it’s my guess that nine of them would not care too much about vegan food, but there’s always going to be that tenth student who’s going to want something different.”
New dishes are going to include a beef steak, beef strips, chicken strips, burgers, meat loaf, meatballs and chicken kiev – all made with soy-based ingredients.
This is some great news for the Diamondbacks. Now there’s no excuse for the famed “freshman 10”! Eat healthy and go vegan!
