Kristina DeMuth, MPH, RD is a plant-based dietitian who received a degree in both nutrition and psychology from the College of Saint Benedict and a Masters of Public Health degree from the University of Minnesota. Kristina has been involved with nutrition-related work in Haiti, and conducted her master’s research in Uganda. She is a blogger at Moxie Musing, where she advocates for conscientious living, shares her global travel adventurous, and provides plant-based eating tips.

Anya Todd
Anya ToddRegistered Dietitian
Anya Todd RD, LD is a registered, licensed dietitian specializing in vegan nutrition, receiving her BS in nutrition from Case Western Reserve University. Anya holds additional training certificates in adult and pediatric weight management from the Academy of Nutrition and Dietetics, along with a certification in plant-based nutrition.  She teaches the Maternal & Pediatric Nutrition course as well as a Sports Nutrition course for the Wellness Forum Institute of Health Studies and also sits on their Health Advisory Board. Additionally, she serves as the State of Ohio’s coordinator of the Vegetarian Nutrition Dietetic Practice Group of the Academy of Nutrition and Dietetics. Anya is the co-author to some of the nutritional content found on Your Daily Vegan, including the Vegan Protein Guide and the Frequently Asked Vegan Nutrition Questions.

I was a self-described burger queen for much of my teens and twenties, existing on a primarily vending machine-based diet as I earned my bachelor’s in Communication. I had an “a ha” moment at the age of twenty-nine when I read Skinny Bitch and immediately ditched meat and milk. After a year and a half transition, I went vegan on Thanksgiving 2009 – an appropriate anniversary to celebrate each year with gratitude. My lifelong friends are sarcasm and cynicism, but I’ve made the acquaintance of new friends optimism and compassion as I live by the motto “do as little harm as possible.” I also take care of a rescue beagle named Millie who came to live with me in 2013. I see veganism as a revolution as much as an evolution – as John Lennon once sang, we all want to change the world. I’m proud to play a part in that change.
